Easy mini taco cups {recipe + giveaway}

My family is all about Mexican food. We love it. Can't get enough of it! I probably make some type of Mexican food at least twice a week, whether it's chicken tacos, barbacoa beef enchiladas, tortilla soup, or just some basic bean burritos with rice on the side. Whatever it is, my kids always gobble it up and ask for more. Lately, I've been making these deliciously easy mini taco cups and they've quickly become a family favorite. 


These little taco cups bake up deliciously crispy in muffin tins- isn't that genius? They are the perfect little size for even small hands too, which is probably why my kids think they are so awesome and eat them up in a hurry. The crispy layers of shells are made with a surprising ingredient- won ton wrappers! (They were super easy to find in the refrigerated section next to the tofu and fresh ravioli/pasta). These little cups of heaven are crunchy on the outside, soft on the inside, and can be filled with whatever seasoned, cheesy, meaty goodness you're craving. Top them with a dollop of sour cream, your favorite salsa, and a little cilantro and these babies are the perfect sized portion for munching! Plus, aren't they just adorable? They're also so quick and easy to make you'll probably never want to go back to regular tacos after trying them. 

Here's what you'll need to make them:

1 lb cooked meat (ground beef, turkey, shredded chicken, beef, etc).
1 package taco seasoning (3 Tbsp)
1-2 cups shredded cheddar or Mexican blend cheese
1 package won ton wrappers 
Toppings: sour cream, La Victoria salsa, shredded lettuce, tomatoes, cilantro, olives, etc. 


Directions:

Preheat oven to 375. Spray your lovingly used muffin tin with cooking spray and line each one with a won ton wrapper.

Add a spoonful of seasoned meat topped with cheese, and then press down with the back of the spoon. Place another won ton wrapper on top of each cup, and fill with meat and cheese again. (Yep, we're making these double deckers!)



Bake for about 11-13 minutes, or until the edges of the won ton wrappers are golden brown and crispy and the cheese is melted.



Let cool for a minute or two before topping with sour cream, La Victoria salsa, and cilantro (and whatever else you'd like). Enjoy!
