I'm a pioneer woman!

Ok, well not really. But I totally forgot that I bought this cookbook on my Nook a few weeks ago.
The Pioneer Woman Cooks by Ree Drummond.
I know you've heard of it, right? I've had at least 5 different friends blog about it and/or Facebook about it in the last few months. I decided to check it out and I love it! Totally my families cooking style. Lots of meat and potato type meals, but spruced up and super rich and decadent. I totally spaced out the fact that I'd bought the book and I hadn't done anything with it because I wasn't cooking for a while after my surgery. Yesterday I was making up a grocery list and was trying to think of something yummy for dinner, and I decided to grab my Nook and go for one of her recipes. Most of the ingredients in the book are things that I already have on hand, but I did have to go stock up on a few items like bacon, heavy cream, butter, and sour cream, since Ree uses a lot of these items in most of her recipes...YUM.

So what did I make? I wanted to make her meatloaf recipe, but my meatloaf recipe is my family's favorite. And yes, don't judge us, we love meatloaf in this house! Mine is the best, and even my 3 and 6 year old ask for seconds and clean their plates when I make it. So I didn't want to mess with a good thing. To go with my fabulous meatloaf I decided to make Ree's twice baked potatoes. I absolutely love twice baked potatoes but I hadn't made them in forever, and the ones in the book looked so good! (and if you think I'm posting the recipe here you are sadly mistaking...sorry, you'll have to buy your own cookbook!) Here's what they looked like before they went back in the oven:

Yep, 2 out of 8 left. That's what I'm having for lunch today! I wanted to have them for breakfast but I didn't want to seem like a glutton. Besides, I had to wait for Shayne to go to work so I wouldn't have to share them! :)

Tonight I'm making Ree's pot roast and mashed potatoes. Shayne is excited!

Oooh, yesterday I finally got to work on a quilt I started a while ago. I need to have it finished ASAP because it's a baby shower gift and the shower is just a few weeks away. I made a lot of progress today and I think I'll sit down today and finish the last dreaded step...the binding. Actually i don't dread the binding anymore because I'm awesome and my bindings always turn out perfect now. I love how polished at quilt looks with a good binding on it. Here's what I did yesterday...free motion quilting!

Oh, right. So my 5 year wedding anniversary was on Monday (8 years together!) We had a pretty low-key date because for 1, Shayne had to work. And 2, we never have a babysitter. I mean, like ever. I think the last time we actually got a sitter and went out just the two of us was probably 2 years ago. Pretty sad, huh? So we just went out to dinner as a family to this really good Mexican place (I love Mexican food!) It was SO good! And I didn't really mind that we took the kids with us, since that's how it always is for us. Oh, and I got roses :) 

And, we started my back piece! I'm so stoked on this. Only in my world would I not feel ok enough after surgery to sew or cook, but I still want to get tattooed. This is only the beginning and it's going to end up being a full back piece.

Do you know what's coming out on dvd tomorrow??????? I'm so freaking excited for this!
Eeeeek! I'm the biggest HP nerd. We went as a family to see this in the theater (of course!) but I'm dying to sit and watch it again. The kids got a bit restless in the theater at times so I got really annoyed trying to keep them quiet and happy and didn't enjoy the movie as much as I should have. I'm watching The Half Blood Prince as I type this blog right now! Haha. I've watched this one 5 times this week now just because it's been on HBO so much. I wish my OnDemand feature for cable would hurry up and put all of the HP movies on there like they were supposed to so I could watch a marathon today. I only own one of the dvds, can you believe that?! I need to go buy them all. 

Ok, 30 Days of Truth time. It's almost over! Yay.

Day 25 → The reason you believe you’re still alive today. Um, I don't do anything stupid? And maybe a little luck I suppose.

Day 26 → Have you ever thought about giving up on life? If so, when and why? No, never.

Day 27 → What’s the best thing going for you right now? Everything. I'm still semi young, I have a great husband, great kids, a nice place to live, family, and a few friends. Life is pretty good.

Day 28 → What if you were pregnant or got someone pregnant, what would you do? I'd be happy! Thrilled. Excited. It would be awesome.

Day 29 → Something you hope to change about yourself. And why. The only thing I can really think of at the moment is I'd love to get healthier and get my full energy and motivation back. I'm slowly working my way out of this slump I've been in but I'm not exactly where I want to be. Soon though!

    I love the Pioneer Woman's cookbook :) Funny enough, I want to try her meatloaf too, but I love mine better :P

    Those potatoes make me drool. I am making baked potatoes with ribs this week, maybe I'll do the twice baked potatoes instead!

  2. Ree Drummond is my favorite! I can't make anything from her book lately with marathon training, but I can't wait to have a splurge meal when it's over! :)

  3. LOVE that cookbook!! My MIL got it for me right when it came out. The chicken pot pie and lasagna are both to die for!! The meatloaf, not so much. Hubby and I didn't like the texture at all.
